Instructions
Marinate Duck
Combine duck legs with Sichuan peppercorns, garlic, soy sauce, sesame oil, salt, and pepper. Marinate for at least 2 hours.
Prepare for Confit
Preheat oven to 130°C (275°F). Place marinated duck in a deep baking dish and cover with duck fat.
Confit Duck
Bake in the oven for 2 to 3 hours, until the meat is tender and falling off the bone.
Serve
Remove duck from fat and serve hot. Optionally, crisp up the skin in a pan before serving.
