Make the Éclair Dough
Preheat the oven to 220°C. In a saucepan, bring water and butter to a boil. Add flour and stir until a dough forms. Cool slightly, then add eggs gradually, beating until smooth.
Bake Éclairs
On a lined baking sheet, pipe dough into 10 cm long éclairs. Bake for 15 minutes until golden. Let cool.
Prepare Raspberry Rose Cream
Whip heavy cream with powdered sugar until stiff peaks form. Gently fold in crushed raspberries and rose water.
Assemble Éclairs
Split éclairs in half. Pipe raspberry rose cream onto the bottom halves, then gently press the tops back on. Dust with powdered sugar before serving.
