Iranian Barberry Rice Pilaf
Discover the unique blend of tart barberries and aromatic saffron in this traditional Iranian Rice Pilaf.

Instructions
Prepare Rice
Soak basmati rice in water for at least 30 minutes. Drain and set aside.
Cook Onions
In a large pan, heat olive oil and butter. Add chopped onions and sauté until golden.
Add Barberries
Add barberries to the onions and cook for a few minutes. Remove half of this mixture and set aside for garnishing.
Cook Rice
Add drained rice to the pan, stir gently to mix with the onions and barberries. Add water and bring to a boil. Reduce heat to low, cover and simmer until rice is cooked and water is absorbed.
Finish with Saffron
Once rice is cooked, sprinkle steeped saffron over the rice. Cover and let it steam for a few more minutes.
Serve
Fluff the rice gently. Serve garnished with the reserved onion-barberry mixture.
