Infuse Cream with Green Tea
Heat heavy cream in a saucepan until hot but not boiling. Whisk in green tea powder until fully dissolved.
Mix Egg Yolks and Sugar
In a bowl, whisk egg yolks and sugar until light and creamy. Gradually add the green tea-infused cream, stirring constantly.
Bake
Preheat oven to 325°F (163°C). Pour mixture into ramekins. Place ramekins in a baking dish, fill the dish with hot water halfway up the sides of the ramekins. Bake for 40 minutes.
Caramelize Topping
Remove from oven, cool to room temperature, then refrigerate for at least 2 hours. Before serving, sprinkle a thin layer of sugar on top and use a kitchen torch to caramelize.
